Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon bits
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork several times.
  3. Cook the potatoes in the air fryer for 35-40 minutes until tender.
  4. Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh, leaving a thin layer.
  5. Brush the insides with olive oil and season with salt and pepper.
  6. Place the potato halves back in the air fryer, skin side down, and cook for an additional 10 minutes until crispy.
  7. Remove from the air fryer and sprinkle with cheese and bacon bits.
  8. Return to the air fryer for another 2-3 minutes until the cheese is melted.
  9. Serve topped with sour cream and green onions.
