Ingredients

- 4 medium russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked bacon bits
- 1/4 cup sour cream
- 2 tablespoons chopped green onions
Instructions
- Preheat the air fryer to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork several times.
- Cook the potatoes in the air fryer for 35-40 minutes until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh, leaving a thin layer.
- Brush the insides with olive oil and season with salt and pepper.
- Place the potato halves back in the air fryer, skin side down, and cook for an additional 10 minutes until crispy.
- Remove from the air fryer and sprinkle with cheese and bacon bits.
- Return to the air fryer for another 2-3 minutes until the cheese is melted.
- Serve topped with sour cream and green onions.
