- 1 lb Andouille sausage, sliced
- 1 cup long-grain rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 tsp Cajun seasoning
- 1 bay leaf
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- In a large pot, cook the Andouille sausage over medium heat until browned.
- Add the onion, bell pepper, celery, and garlic; sauté until the vegetables are tender.
- Stir in the rice, diced tomatoes, chicken broth, Cajun seasoning, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low and cover.
- Simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove the bay leaf and fluff the rice with a fork.
- Garnish with sliced green onions before serving.
Notes
- For a spicier version, add chopped jalapeños or cayenne pepper.
- This dish can be made ahead of time and reheated for easy meals.
- Feel free to add shrimp or chicken for additional protein.
