  • 2 tsp Cajun seasoning
  • 1 bay leaf

Instructions

  1. In a large pot, cook the Andouille sausage over medium heat until browned.
  2. Add the onion, bell pepper, celery, and garlic; sauté until the vegetables are tender.
  3. Stir in the rice, diced tomatoes, chicken broth, Cajun seasoning, bay leaf, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat to low and cover.
  5. Simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
