Ingredients

- 2 fillets of salmon
- 8 oz fettuccine or penne pasta
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the pasta in a pot of salted boiling water until al dente, then drain and set aside.
- Heat olive oil in a skillet over medium heat, season salmon with salt and pepper, and cook for about 4–5 minutes on each side until it flakes easily.
- Remove the salmon from the skillet and set aside.
- Add the minced garlic to the skillet and sauté until fragrant.
- Toss in the fresh spinach and cook until wilted.
- Pour in the heavy cream and stir, letting it come to a gentle simmer.
- Add the cooked pasta to the skillet and toss to combine with the sauce.
- Flake the salmon into large chunks and fold gently into the pasta.
- Serve hot, topped with freshly grated Parmesan cheese.
Notes
For make-ahead tips, prepare the salmon and spinach separately in the fridge and combine them when ready to cook. Store leftovers in an airtight container for up to three days.
