- 2 cups Shredded Chicken
- 1 packet Taco Seasoning
- 1 cup Sour Cream
- 1 cup Shredded Cheddar Cheese
- 1 can Chopped Green Chilies
- 1 package Velveeta Cheese
- 1 can Diced Tomatoes with Green Chilies
- 8 Tortillas
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine shredded chicken, taco seasoning, sour cream, chopped green chilies, and diced tomatoes.
- Warm tortillas in a skillet over low heat for about 30 seconds per side.
- Spread about 1/4 cup of the filling on each tortilla and roll them tightly.
- Place the rolled tortillas seam-side down in a greased baking dish.
- Melt the Velveeta cheese over low heat and pour it over the enchiladas.
- Sprinkle with shredded cheddar cheese and bake for 20–25 minutes until bubbling and golden.
- Let cool for a few minutes before serving.
Notes
Assemble enchiladas earlier in the day and refrigerate until ready to bake. For smaller portions, air fry at 375°F for 10-15 minutes.
