Description

Delight in these creamy quesadilla-style chicken enchiladas, wrapped in warm tortillas and topped with velvety queso sauce, perfect for family dinners.


Ingredients

  • 2 cups Shredded Chicken
  • 1 packet Taco Seasoning
  • 1 cup Sour Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 can Chopped Green Chilies
  • 1 package Velveeta Cheese
  • 1 can Diced Tomatoes with Green Chilies
  • 8 Tortillas

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, taco seasoning, sour cream, chopped green chilies, and diced tomatoes.
  3. Warm tortillas in a skillet over low heat for about 30 seconds per side.
  4. Spread about 1/4 cup of the filling on each tortilla and roll them tightly.
  5. Place the rolled tortillas seam-side down in a greased baking dish.
  6. Melt the Velveeta cheese over low heat and pour it over the enchiladas.
  7. Sprinkle with shredded cheddar cheese and bake for 20–25 minutes until bubbling and golden.
  8. Let cool for a few minutes before serving.

Notes

Assemble enchiladas earlier in the day and refrigerate until ready to bake. For smaller portions, air fry at 375°F for 10-15 minutes.
