- 2–3 tablespoons cold water
- For the filling:
- 2 cups fresh cranberries, rinsed and drained
- 1 cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, sugar, and butter. Use a pastry cutter to mix until crumbly.
- Add egg yolk and cold water, mixing until a dough forms. Press into a 9-inch pie pan and chill for 30 minutes.
- Blind bake the crust for 15 minutes until lightly golden. Remove from oven and set aside.
- In a separate bowl, whisk together eggs, sugar, cream, vanilla, cinnamon, and salt until smooth.
- Spread cranberries evenly over the baked crust, then pour the custard mixture on top.
- Bake for 40-45 minutes, or until the custard is set and a knife inserted comes out clean.
- Let cool completely before serving. Enjoy chilled or at room temperature.
