Ingredients

  • Cheese: 8 oz cream cheese, softened

  • Black Beans: 1/2 cup canned black beans, drained and rinsed
  • Corn: 1/2 cup canned corn, drained
  • Bell Pepper: 1/2 cup diced red bell pepper
  • Green Onions: 1/4 cup chopped green onions
  • Spices: 1 tsp garlic powder, 1 tsp cumin, 1/2 tsp smoked paprika, salt and pepper to taste
  • Coating: 1/2 cup crushed tortilla chips

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, cheddar cheese, jalapeños, black beans, corn, bell pepper, and green onions.
  2. Add the garlic powder, cumin, smoked paprika, salt, and pepper. Mix until well combined.
  3. Shape the mixture into a ball and wrap it in plastic wrap. Refrigerate for at least 2 hours to firm up.
  4. Once chilled, roll the cheese ball in crushed tortilla chips until fully coated.
  5. Transfer to a serving platter and serve with additional tortilla chips or vegetable sticks.
