- 1 pound chicken breast, cubed
- 2 cups broccoli florets
- 1/2 cup unsalted butter
- 2 cloves garlic, minced
- 1 unit lemon, juiced and zested
- 1 teaspoon paprika

- Optional fresh parsley, chopped for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions, about 10-12 minutes. Reserve 1 cup of cooking water before draining.
- Sauté the Chicken: In a skillet, melt 1/4 cup butter over medium-high heat. Add cubed chicken, season with salt, pepper, and paprika. Cook for 5-7 minutes until golden brown. Set aside.
- Cook the Broccoli: In the same skillet, sauté the broccoli florets for about 3-4 minutes until bright green and crisp-tender.
- Make the Cowboy Butter Sauce: Return chicken to the skillet, pour in remaining melted butter, garlic, lemon juice, and zest. Stir to combine.
- Combine and Serve: Add drained pasta to skillet, tossing everything together. Use reserved pasta water for desired creaminess. Adjust seasoning and garnish with parsley.
Notes
For a lighter version, consider grilling the chicken. You can also use pre-cooked chicken for a time-saving option.
