Ingredients

- 6 large eggs
- 1 cup cottage cheese
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the eggs, cottage cheese, salt, and pepper.
- In a skillet, heat olive oil over medium heat and sauté the onion and bell pepper until soft.
- Add the spinach and cook until wilted.
- Pour the egg mixture into the skillet and stir to combine with the vegetables.
- Sprinkle the shredded cheese on top.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the frittata is set and golden.
- Let it cool for a few minutes before slicing and serving.
Notes
- Feel free to add other vegetables or herbs to customize your frittata.
- This dish can be served warm or at room temperature.
- Leftovers can be stored in the refrigerator for up to 3 days.
