- 4 slices whole grain bread

Instructions
- In a large bowl, combine the shredded chicken, cottage cheese, celery, red onion, mayonnaise, and Dijon mustard.
- Mix well until all ingredients are evenly coated.
- Season with salt and pepper to taste.
- Toast the whole grain bread if desired.
- Spread the chicken salad mixture onto two slices of bread.
