Ingredients

  • 1 cup cottage cheese
  • 2 ripe bananas
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a blender, combine the cottage cheese, bananas, eggs, honey (or maple syrup), and vanilla extract. Blend until smooth.
  3. Add the rolled oats, baking powder, baking soda, and salt to the blender. Blend again until well combined.
  4. If using, fold in the chocolate chips.
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
