Ingredients

Scale
  • For the Soup:
    • 1 lb ground beef
    • 1 medium onion, diced
    • 3 cloves garlic, minced
    • 1 can (28 oz) crushed tomatoes
    • 4 cups beef broth
    • 2 cups water
    • 2 tsp Italian seasoning
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 2 cups bow tie pasta
  • For the Cheese Mixture:
    • 15 oz ricotta cheese
    • 1 cup shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 1 egg
    • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked, about 5-7 minutes.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the crushed tomatoes, beef broth, water, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Once boiling, reduce heat to a simmer and add the bow tie pasta. Cook for 10-12 minutes, or until pasta is al dente.
  5. In a separate bowl, mix together the ricotta cheese, mozzarella cheese, Parmesan cheese, egg, and chopped basil until well combined.
  6. Once the pasta is cooked, remove the soup from heat and stir in the cheese mixture until melted and creamy.
  7. Serve hot, garnished with additional basil and cheese if desired.
