- 1 Box Vanilla Cake Mix
- 3 Large Eggs
- 1 Cup Water
- 1 Can (14 ounces) Sweetened Condensed Milk
- 1/4 Cup Fresh Lime Juice
- 1 Teaspoon Lime Zest
- 1 Cup Whipped Topping
- 1 Cup Shredded Coconut
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- Combine cake mix, eggs, and water in a large mixing bowl, whisking until smooth.
- Pour the batter into the prepared baking pan and bake according to package instructions.
- Remove the cake from the oven, and while still warm, poke holes in the top with a fork.
- Mix sweetened condensed milk, lime juice, and lime zest in a separate bowl until combined.
- Pour the mixture over the warm cake, allowing it to seep into the holes.
- Allow the cake to cool completely in the pan.
- Spread whipped topping over the cooled cake.
- Sprinkle shredded coconut on top.
- Chill in the refrigerator for a couple of hours before serving.
Notes
Make the cake a day in advance for enhanced flavor. Monitor baking time closely to avoid drying out the cake.
