Description

A tropical-themed dessert cake soaked in sweetened condensed milk and topped with whipped cream and toasted coconut, perfect for any occasion.

Ingredients

Scale
  • 1 Box Vanilla Cake Mix
  • 3 Large Eggs
  • 1 Cup Water
  • 1 Can (14 ounces) Sweetened Condensed Milk
  • 1/4 Cup Fresh Lime Juice
  • 1 Teaspoon Lime Zest
  • 1 Cup Whipped Topping
  • 1 Cup Shredded Coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. Combine cake mix, eggs, and water in a large mixing bowl, whisking until smooth.
  3. Pour the batter into the prepared baking pan and bake according to package instructions.
  4. Remove the cake from the oven, and while still warm, poke holes in the top with a fork.
  5. Mix sweetened condensed milk, lime juice, and lime zest in a separate bowl until combined.
  6. Pour the mixture over the warm cake, allowing it to seep into the holes.
  7. Allow the cake to cool completely in the pan.
  8. Spread whipped topping over the cooled cake.
  9. Sprinkle shredded coconut on top.
  10. Chill in the refrigerator for a couple of hours before serving.

Notes

Make the cake a day in advance for enhanced flavor. Monitor baking time closely to avoid drying out the cake.
