- 1 cup fresh pineapple, diced
Instructions
- In a bowl, whisk together coconut milk, chia seeds, honey (or maple syrup), and vanilla extract.
- Cover the bowl and refrigerate for at least 4 hours or overnight until it thickens.
- Once thickened, stir the pudding and divide it into serving bowls.
- Top with diced fresh pineapple before serving.
Notes
- For a vegan option, use maple syrup instead of honey.
- Chia pudding can be stored in the refrigerator for up to 5 days.
