Ingredients

  • Green Beans: 1 pound, trimmed and cut into 1-inch pieces
  • Mushroom Soup: 2 cups, preferably homemade or high-quality canned
  • Milk: 1/2 cup, whole milk for creaminess
  • Onion: 1 medium, finely chopped
  • Garlic: 2 cloves, minced
  • Fried Onions: 1 1/2 cups, for topping
  • Black Pepper: 1/2 teaspoon, freshly ground
  • Salt: 1/2 teaspoon, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring salted water to a boil and blanch the green beans for 5 minutes until bright green and slightly tender.
  3. Drain the green beans and immediately transfer them to an ice bath to stop the cooking process.
  4. In a large mixing bowl, combine the mushroom soup, milk, chopped onion, minced garlic, black pepper, and salt.
  5. Add the blanched green beans to the mixture and stir until well coated.
  6. Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
  7. Bake in the preheated oven for 25 minutes, until bubbly.
  8. Remove from the oven and sprinkle the fried onions on top, then return to the oven for an additional 10 minutes until the onions are golden brown.

Notes

  • This casserole can be made a day in advance; simply assemble it without the fried onions, cover, and refrigerate. Add the onions before baking.
