- 2 cups fresh spinach
- 2 English muffins, split and toasted
- 1 tablespoon butter
- 1 tablespoon white vinegar
- 1 cup hollandaise sauce
Instructions
- In a skillet, melt butter over medium heat and sauté the spinach until wilted.
- Fill a pot with water and bring it to a gentle simmer. Add vinegar.
- Crack each egg into a small bowl and gently slide them into the simmering water.
- Poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny.
- Remove the eggs with a slotted spoon and drain on paper towels.
- To assemble, place the toasted English muffins on plates, top with sautéed spinach, and then place a poached egg on each muffin half.
- Drizzle with hollandaise sauce and serve immediately.
Notes
- For a richer flavor, add a pinch of nutmeg to the spinach.
- Ensure the water is at a gentle simmer to prevent the eggs from breaking apart.
- Hollandaise sauce can be made ahead of time and gently reheated.
