This Citrus Almond Layer Cake is a delightful treat that combines the nutty flavor of almonds with the bright, zesty notes of citrus. Each layer is moist and fluffy, while the creamy orange frosting adds a luscious finish that dances on your palate.

Ingredients

Scale
  • Cake:
    • 2 cups all-purpose flour
    • 1 cup almond flour
    • 1 ½ cups granulated sugar
    • 1 cup unsalted butter, softened
    • 4 large eggs
    • 1 cup buttermilk
    • 2 tablespoons orange zest
    • 1 tablespoon lemon zest
    • 1 tablespoon baking powder
    • ½ teaspoon salt
  • Frosting:
    • 1 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 4 tablespoons fresh orange juice
    • 1 tablespoon orange zest
    • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 5 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients.
  6. Fold in the orange and lemon zest until evenly distributed.
  7. Divide the batter evenly between three greased 9-inch round cake pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  10. For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar, orange juice, orange zest, and vanilla extract until smooth and fluffy.
  11. Once the cakes are completely cool, frost the top of one layer, add the second layer, and repeat. Frost the top and sides of the cake with the remaining frosting.

  • This cake can be made a day in advance; store it in an airtight container at room temperature.
