Ingredients
Scale
- Cake:
- 2 cups all-purpose flour
- 1 cup almond flour
- 1 ½ cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup buttermilk
- 2 tablespoons orange zest
- 1 tablespoon lemon zest
- 1 tablespoon baking powder
- ½ teaspoon salt
- Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 4 tablespoons fresh orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 5 minutes.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients.
- Fold in the orange and lemon zest until evenly distributed.
- Divide the batter evenly between three greased 9-inch round cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar, orange juice, orange zest, and vanilla extract until smooth and fluffy.
- Once the cakes are completely cool, frost the top of one layer, add the second layer, and repeat. Frost the top and sides of the cake with the remaining frosting.
