Cinnamon Apple Hand Pies are a delightful homemade pastry filled with sweet cinnamon-spiced apples, perfect for a snack or dessert.

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 2 cups apples, peeled and diced
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
Instructions
- In a bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
- Stir in ice water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.
- In another bowl, combine apples, cinnamon, brown sugar, and lemon juice.
- Preheat oven to 375°F (190°C).
- Roll out dough on a floured surface and cut into circles.
- Place a spoonful of apple mixture on one half of each circle, fold over, and seal edges.
- Brush tops with beaten egg.
- Bake for 25-30 minutes or until golden brown.
Notes
- For a sweeter filling, add more sugar to the apple mixture.
- These hand pies can be frozen before baking for later use.
- Serve warm with vanilla ice cream for an extra treat.
