Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup ice water
  • 2 cups apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Stir in ice water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.
  3. In another bowl, combine apples, cinnamon, brown sugar, and lemon juice.
  4. Preheat oven to 375°F (190°C).
  5. Roll out dough on a floured surface and cut into circles.
  6. Place a spoonful of apple mixture on one half of each circle, fold over, and seal edges.
  7. Brush tops with beaten egg.
  8. Bake for 25-30 minutes or until golden brown.

Notes

  • For a sweeter filling, add more sugar to the apple mixture.
  • These hand pies can be frozen before baking for later use.
