Description

A vibrant salad of fluffy quinoa, bell peppers, cherry tomatoes, and creamy avocado, dressed in cilantro lime.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1 cup bell peppers, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado, diced (optional)

Instructions

  1. Rinse the quinoa under cold running water in a colander.
  2. Cook the rinsed quinoa and water in a medium-sized pot, bringing it to a vigorous boil.
  3. Cover the pot with a lid, reduce heat to low, and let it simmer for about 15 minutes.
  4. Fluff the quinoa gently with a fork and allow it to cool for a few minutes.
  5. Combine the cooled quinoa with cilantro, lime juice, bell peppers, cherry tomatoes, red onion, salt, and black pepper in a large mixing bowl.
  6. Toss the mixture gently until well-combined and adjust seasoning if needed.
  7. Add diced avocado just before serving if desired.
  8. Serve chilled or at room temperature.

Notes

This salad can be made ahead of time; just keep avocado separate until serving.
