- Cake:
- 1 box (15.25 oz) vanilla cake mix
- 3 large eggs
- 1 cup water
- 1/3 cup vegetable oil
- Jello:
- 1 box (3 oz) raspberry jello
- 1 cup boiling water
- 1/2 cup cold water
- Topping:
- 1 container (8 oz) whipped topping
- 1/2 cup fresh raspberries (for garnish)
- 1/4 cup crushed peppermint candies (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cake mix, eggs, water, and vegetable oil. Beat on medium speed for 2 minutes until well blended.
- Pour the batter into a greased 9×13 inch baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, dissolve the raspberry jello in 1 cup of boiling water, then stir in 1/2 cup of cold water. Set aside.
- Once the cake is done, remove it from the oven and let it cool for 10 minutes. Use the handle of a wooden spoon to poke holes all over the top of the cake.
- Pour the prepared jello mixture evenly over the cake, allowing it to seep into the holes. Refrigerate for at least 4 hours, or overnight for best results.
- Before serving, spread the whipped topping over the cake and garnish with fresh raspberries and crushed peppermint candies.
