    • 3 large eggs
    • 1 cup water
    • 1/3 cup vegetable oil
  • Jello:
    • 1 box (3 oz) raspberry jello
    • 1 cup boiling water
    • 1/2 cup cold water
  • Topping:
    • 1 container (8 oz) whipped topping
    • 1/2 cup fresh raspberries (for garnish)
    • 1/4 cup crushed peppermint candies (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cake mix, eggs, water, and vegetable oil. Beat on medium speed for 2 minutes until well blended.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  4. While the cake is baking, dissolve the raspberry jello in 1 cup of boiling water, then stir in 1/2 cup of cold water. Set aside.
  5. Once the cake is done, remove it from the oven and let it cool for 10 minutes. Use the handle of a wooden spoon to poke holes all over the top of the cake.
  6. Pour the prepared jello mixture evenly over the cake, allowing it to seep into the holes. Refrigerate for at least 4 hours, or overnight for best results.
  7. Before serving, spread the whipped topping over the cake and garnish with fresh raspberries and crushed peppermint candies.
