- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/2 cup chocolate chips
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the wet ingredients: combine the sourdough starter, milk, vegetable oil, and sugar. Stir until smooth.
- Combine the dry ingredients: in another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Mix the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Fold in the chocolate chips gently.
- Deposit the batter into muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
Notes
For a vegan version, substitute eggs with flax eggs and use almond milk. Muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for longer storage.
