  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the wet ingredients: combine the sourdough starter, milk, vegetable oil, and sugar. Stir until smooth.
  3. Combine the dry ingredients: in another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. Mix the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  5. Fold in the chocolate chips gently.
  6. Deposit the batter into muffin cups, filling each about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

For a vegan version, substitute eggs with flax eggs and use almond milk. Muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for longer storage.
