Ingredients

Scale
  • Cake:
    • 1 ¾ cups all-purpose flour
    • 1 ¾ cups granulated sugar
    • ¾ cup unsweetened cocoa powder
    • 1 ½ teaspoons baking powder
    • 1 ½ teaspoons baking soda
    • 1 teaspoon salt
    • 2 large eggs
    • 1 cup whole milk
    • ½ cup vegetable oil
    • 2 teaspoons vanilla extract
    • 1 cup boiling water
  • Pudding Filling:
    • 1 (3.9 oz) box chocolate instant pudding mix
    • 2 cups cold milk
  • Topping:
    • 1 cup heavy whipping cream
    • ¼ cup powdered sugar
    • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract to the dry ingredients and mix until well combined.
  4. Slowly stir in boiling water until the batter is smooth (the batter will be thin).
  5. Pour the batter into a greased 9×13 inch baking pan.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool for 10 minutes, then poke holes all over the top using a fork.
  8. In a separate bowl, whisk together the chocolate pudding mix and cold milk until thickened, about 2 minutes.
  9. Pour the pudding over the cake, ensuring it fills the holes.
  10. Refrigerate the cake for at least 2 hours to set the pudding.
  11. Before serving, whip the heavy cream with powdered sugar and vanilla until soft peaks form, then spread over the cake.

Notes

  • This cake can be made a day in advance; just keep it covered in the refrigerator.
