Description
These Chocolate-Dipped Cherry Sugar Cookies are a delightful treat that combines the sweetness of sugar cookies with the tartness of cherries, all enveloped in a rich layer of chocolate. The cookies are soft and chewy, with a buttery texture that melts in your mouth, while the chocolate coating adds a luxurious finish that makes each bite irresistible.
Ingredients
Scale
- For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup dried cherries, chopped
- For the Chocolate Coating:
- 8 ounces semi-sweet chocolate, chopped
- 1 tablespoon coconut oil (optional, for smoothness)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped dried cherries.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly underbaked.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- While the cookies cool, melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. If using, stir in the coconut oil for a smoother consistency.
- Dip the cooled cookies halfway into the melted chocolate, allowing excess to drip off, and place them back on the parchment paper to set.
- Let the chocolate harden at room temperature or refrigerate for quicker setting.
Notes
- Make-ahead: The cookie dough can be prepared and refrigerated for up to 3 days before baking.
- Storage: Store cookies in an airtight container at room temperature for up to 1 week.
- Substitutions: Use dark chocolate for a richer flavor or substitute dried cranberries for cherries.
