  • Diet: Vegetarian

Description

These Chocolate-Dipped Cherry Sugar Cookies are a delightful treat that combines the sweetness of sugar cookies with the tartness of cherries, all enveloped in a rich layer of chocolate. The cookies are soft and chewy, with a buttery texture that melts in your mouth, while the chocolate coating adds a luxurious finish that makes each bite irresistible.

Ingredients

Scale
  • For the Cookies:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 2 ½ cups all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • 1 cup dried cherries, chopped
  • For the Chocolate Coating:
    • 8 ounces semi-sweet chocolate, chopped
    • 1 tablespoon coconut oil (optional, for smoothness)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped dried cherries.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly underbaked.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. While the cookies cool, melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. If using, stir in the coconut oil for a smoother consistency.
  11. Dip the cooled cookies halfway into the melted chocolate, allowing excess to drip off, and place them back on the parchment paper to set.
  12. Let the chocolate harden at room temperature or refrigerate for quicker setting.

Notes

  • Make-ahead: The cookie dough can be prepared and refrigerated for up to 3 days before baking.
  • Storage: Store cookies in an airtight container at room temperature for up to 1 week.
  • Substitutions: Use dark chocolate for a richer flavor or substitute dried cranberries for cherries.
