Description
Delicious shortbread cookies infused with cherry flavor and dipped in rich chocolate.
Ingredients

			- 1 cup unsalted butter, softened
 - 1/2 cup powdered sugar
 - 1 teaspoon vanilla extract
 - 2 cups all-purpose flour
 - 1/4 teaspoon salt
 - 1/2 cup dried cherries, chopped
 - 1 cup semi-sweet chocolate chips
 
Instructions
- Preheat the oven to 350°F (175°C).
 - In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
 - Add the vanilla extract and mix well.
 - Gradually add the flour and salt, mixing until just combined.
 - Fold in the chopped dried cherries.
 - Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
 - Flatten each ball slightly with the bottom of a glass.
 - Bake for 12-15 minutes or until the edges are lightly golden.
 - Let the cookies cool completely on a wire rack.
 - Melt the chocolate chips in a microwave or double boiler.
 - Dip the cooled cookies halfway into the melted chocolate and place them back on the parchment paper to set.
 
Notes
- Store cookies in an airtight container for up to a week.
 - For a festive touch, sprinkle some sea salt on top of the chocolate before it sets.
 - Feel free to substitute dried cherries with other dried fruits if desired.
