Delicious cupcakes combining rich chocolate and fresh strawberries, finished with a glossy chocolate topping.

- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup fresh strawberries, chopped
- 1/2 cup strawberry frosting (optional)
- 1 cup chocolate chips
- 1 tbsp vegetable oil (for chocolate topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt until thoroughly combined.
- Add the eggs, milk, oil, and vanilla, then mix until just combined. Gradually stir in the boiling water until the batter is smooth and glossy.
- Pour the batter into the cupcake liners, filling them about two-thirds full.
- Bake for 20-25 minutes until a toothpick inserted into the center comes out clean.
- Let cool completely, then use a knife or cupcake corer to gently remove the center of each cupcake and fill it with chopped strawberries or optional strawberry frosting.
- Melt the chocolate chips and vegetable oil in a microwave-safe bowl until smooth. Dip the tops of each cupcake into this melted chocolate.
- Allow the chocolate to set before serving.
Notes
Keep unfrosted cupcakes in an airtight container to maintain moisture. Consider customizing with different fruits or frostings.
