Chocolate Covered Strawberry Cupcakes

Description

Delicious cupcakes combining rich chocolate and fresh strawberries, finished with a glossy chocolate topping.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup fresh strawberries, chopped
  • 1/2 cup strawberry frosting (optional)
  • 1 cup chocolate chips
  • 1 tbsp vegetable oil (for chocolate topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt until thoroughly combined.
  3. Add the eggs, milk, oil, and vanilla, then mix until just combined. Gradually stir in the boiling water until the batter is smooth and glossy.
  4. Pour the batter into the cupcake liners, filling them about two-thirds full.
  5. Bake for 20-25 minutes until a toothpick inserted into the center comes out clean.
  6. Let cool completely, then use a knife or cupcake corer to gently remove the center of each cupcake and fill it with chopped strawberries or optional strawberry frosting.
  7. Melt the chocolate chips and vegetable oil in a microwave-safe bowl until smooth. Dip the tops of each cupcake into this melted chocolate.
  8. Allow the chocolate to set before serving.

Notes

Keep unfrosted cupcakes in an airtight container to maintain moisture. Consider customizing with different fruits or frostings.
