Ingredients
Scale
- For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- For the Cherry Filling:
- 1 cup cherry preserves
- 1 tablespoon lemon juice
- For the Chocolate Drizzle:
- 1/2 cup semi-sweet chocolate chips
- 1 teaspoon vegetable oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Using a tablespoon, scoop out dough and roll into balls, placing them on a baking sheet lined with parchment paper.
- Using your thumb, make an indentation in the center of each cookie.
- Fill each indentation with cherry preserves, about 1/2 teaspoon each.
- Bake in the preheated oven for 12-15 minutes, or until the edges are firm but the centers are still soft.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- For the chocolate drizzle, melt the chocolate chips with vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Drizzle the melted chocolate over the cooled cookies and let set before serving.
