Ingredients

Scale
  • For the Cookies:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 2 cups all-purpose flour
    • 1/2 cup unsweetened cocoa powder
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
  • For the Cherry Filling:
    • 1 cup cherry preserves
    • 1 tablespoon lemon juice
  • For the Chocolate Drizzle:
    • 1/2 cup semi-sweet chocolate chips
    • 1 teaspoon vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Using a tablespoon, scoop out dough and roll into balls, placing them on a baking sheet lined with parchment paper.
  7. Using your thumb, make an indentation in the center of each cookie.
  8. Fill each indentation with cherry preserves, about 1/2 teaspoon each.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are firm but the centers are still soft.
  10. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  11. For the chocolate drizzle, melt the chocolate chips with vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  12. Drizzle the melted chocolate over the cooled cookies and let set before serving.
