- 1 cup black beans, cooked
- 1 cup brown rice, cooked
- 1/2 cup corn, canned or frozen
- 1/2 cup diced tomatoes
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a bowl, layer the cooked brown rice as the base.
- Add the black beans on top of the rice.
- Layer the corn and diced tomatoes over the beans.
- Top with sliced avocado and chopped cilantro.
- Drizzle lime juice over the entire bowl.
- Season with salt and pepper to taste.
Notes
- Feel free to add other toppings like cheese or sour cream.
- This dish can be made vegan by omitting cheese.
