    • 1/2 cup crumbled queso fresco

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, vegetable oil, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped chiles and both cheeses until evenly distributed.
  6. Grease a 9×9 inch baking dish and pour the batter into it.
  7. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
