Ingredients

- 1 cup charred corn
- 4 cups chicken broth
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Tortilla strips for garnish
- Fresh cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and garlic, sauté until translucent.
- Stir in cumin and chili powder, cooking for an additional minute.
- Add chicken broth, shredded chicken, black beans, diced tomatoes, and charred corn.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with tortilla strips and fresh cilantro.
Notes
- For extra flavor, you can add lime juice before serving.
- Feel free to adjust the spice level by adding more chili powder or jalapeños.
