- 2 chicken breasts, boneless and skinless
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 2 teaspoons ground paprika
- 1 teaspoon ground turmeric
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Water to thin the dressing
Instructions
- In a bowl, mix olive oil, cumin, paprika, turmeric, garlic powder, salt, and pepper.
- Coat the chicken breasts with the marinade and let it sit for at least 30 minutes.
- Preheat the grill or skillet over medium heat.
- Cook the chicken for about 6-7 minutes on each side or until fully cooked.
- Remove the chicken from heat and let it rest for a few minutes before slicing.
- In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together tahini, lemon juice, and water until smooth.
- Add the sliced chicken on top of the salad and drizzle with tahini dressing.
- Toss gently to combine and serve immediately.
Notes
- For extra flavor, marinate the chicken overnight.
- Feel free to add other vegetables like bell peppers or carrots.
