Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • Water to thin the dressing

Instructions

  1. In a bowl, mix olive oil, cumin, paprika, turmeric, garlic powder, salt, and pepper.
  2. Coat the chicken breasts with the marinade and let it sit for at least 30 minutes.
  3. Preheat the grill or skillet over medium heat.
  4. Cook the chicken for about 6-7 minutes on each side or until fully cooked.
  5. Remove the chicken from heat and let it rest for a few minutes before slicing.
  6. In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and parsley.
  7. In a small bowl, whisk together tahini, lemon juice, and water until smooth.
  8. Add the sliced chicken on top of the salad and drizzle with tahini dressing.
  9. Toss gently to combine and serve immediately.
