Ingredients

  • White Wine: 1/2 cup dry white wine

Instructions

  1. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until melted.
  2. Add the chicken pieces, season with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  5. Pour in the white wine and lemon juice, scraping the bottom of the skillet to deglaze, and let it simmer for 2-3 minutes.
  6. Stir in the heavy cream and remaining butter, allowing it to melt and combine for about 2 minutes.
  7. Add the cooked chicken back into the skillet, along with the grated Parmesan cheese and chopped parsley, stirring to combine.
  8. Serve the chicken scampi over the cooked pasta, garnished with additional parsley and Parmesan if desired.
