- 2 large sweet potatoes
- 1 cup cooked chicken, shredded
- 1 ripe avocado, diced
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- In a bowl, combine shredded chicken, diced avocado, Greek yogurt, lime juice, garlic powder, salt, and pepper.
- Once the sweet potatoes are cooked, cut them in half and scoop out a little flesh to make room for the filling.
- Stuff the sweet potatoes with the chicken and avocado mixture.
- Garnish with fresh cilantro and serve warm.

- For a spicier kick, add diced jalapeños to the filling.
