  • 2 tablespoons olive oil
  • 4 cups chicken broth
  • 1 cup heavy cream (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic, thyme, and rosemary; cook for another minute.
  4. Add shredded chicken, apple cider, and chicken broth; bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. If using, stir in heavy cream and heat through.
  7. Season with salt and pepper to taste before serving.
