A warm and comforting soup made with chicken, apple cider, and a blend of spices, perfect for chilly days.

			- 2 cups cooked chicken, shredded
 - 4 cups apple cider
 - 1 medium onion, diced
 - 2 carrots, sliced
 - 2 celery stalks, diced
 - 3 cloves garlic, minced
 - 1 teaspoon thyme
 - 1 teaspoon rosemary
 - Salt and pepper to taste
 - 2 tablespoons olive oil
 - 4 cups chicken broth
 - 1 cup heavy cream (optional)
 
Instructions
- In a large pot, heat olive oil over medium heat.
 - Add onion, carrots, and celery; sauté until softened.
 - Stir in garlic, thyme, and rosemary; cook for another minute.
 - Add shredded chicken, apple cider, and chicken broth; bring to a boil.
 - Reduce heat and simmer for 20 minutes.
 - If using, stir in heavy cream and heat through.
 - Season with salt and pepper to taste before serving.
 
Notes
- For a thicker soup, blend a portion of the soup and return it to the pot.
 - Can be made ahead and stored in the refrigerator for up to 3 days.
 - Freezes well for up to 2 months.
