  • 24 ladyfinger cookies
  • 1 cup fresh cherries, pitted and halved
  • Cocoa powder for dusting

Instructions

  1. In a shallow dish, combine the brewed espresso and amaretto.
  2. In a mixing bowl, whisk together the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
  3. Dip each ladyfinger into the espresso mixture for a few seconds, ensuring they are soaked but not soggy.
  4. Layer half of the soaked ladyfingers in the bottom of a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Add half of the cherries on top of the mascarpone layer.
  7. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
  8. Cover and refrigerate for at least 4 hours, or overnight for best results.
  9. Before serving, dust the top with cocoa powder.

Notes

  • For a non-alcoholic version, substitute amaretto with almond extract and additional milk.
  • Feel free to use frozen cherries if fresh ones are not available.
