  • For the Dough:
    • 3 cups all-purpose flour
    • 1 packet (2 1/4 tsp) active dry yeast
    • 1 cup warm water (110°F)
    • 2 tbsp sugar
    • 1 tsp salt
    • 2 tbsp olive oil
  • For the Filling:
    • 1 1/2 cups shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 4 cloves garlic, minced
    • 2 tbsp fresh parsley, chopped
    • 1/2 tsp red pepper flakes (optional)
  • For the Topping:
    • 4 tbsp unsalted butter, melted
    • 1 tsp garlic powder
    • 1/2 tsp dried oregano

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 375°F (190°C).
  6. In a separate bowl, mix together the mozzarella, Parmesan, garlic, parsley, and red pepper flakes.
  7. Once the dough has risen, punch it down and divide it into 12 equal pieces. Flatten each piece and place a spoonful of the cheese mixture in the center. Fold the dough over the filling and pinch to seal.
  8. Place the rolls seam-side down on a greased baking sheet. Brush with melted butter mixed with garlic powder and oregano.
  9. Bake for 20-25 minutes or until golden brown. Serve warm.
