A delicious and creamy pasta bake featuring spinach and artichokes, topped with melted cheese for a comforting meal.

- 8 oz pasta (penne or rotini)
- 1 cup frozen spinach, thawed and drained
- 1 cup canned artichoke hearts, drained and chopped
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente, then drain.
- In a large bowl, combine the cream cheese, sour cream, garlic, salt, pepper, and red pepper flakes.
- Add the cooked pasta, spinach, artichokes, and half of the mozzarella and Parmesan cheese to the bowl. Mix well.
- Transfer the mixture to a greased baking dish and spread evenly.
- Top with the remaining mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a lighter version, you can use low-fat cream cheese and sour cream.
- Feel free to add cooked chicken or shrimp for extra protein.
- This dish can be made ahead of time and stored in the refrigerator before baking.
