A comforting and creamy Cheesy Southern Squash Casserole made with fresh yellow squash, cheddar cheese, and a crunchy cracker topping.

- 2 medium yellow squash, sliced
- 1 small onion, chopped
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 2 large eggs
- 1 cup crushed crackers
- 4 tablespoons butter, melted
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Sauté the vegetables in a large skillet with butter until softened, about 5-7 minutes.
- Prepare the cheese mixture by combining cheddar cheese, sour cream, eggs, salt, and pepper in a mixing bowl.
- Combine the sautéed vegetables with the cheese mixture and stir gently.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Prepare the crust by mixing crushed crackers with melted butter, and sprinkle over the casserole.
- Bake for 30-35 minutes until the top is golden brown.
- Cool for a few minutes before slicing and serving.
