Description

A comforting and creamy Cheesy Southern Squash Casserole made with fresh yellow squash, cheddar cheese, and a crunchy cracker topping.


Ingredients

  • 2 medium yellow squash, sliced
  • 1 small onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 2 large eggs
  • 1 cup crushed crackers
  • 4 tablespoons butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the vegetables in a large skillet with butter until softened, about 5-7 minutes.
  3. Prepare the cheese mixture by combining cheddar cheese, sour cream, eggs, salt, and pepper in a mixing bowl.
  4. Combine the sautéed vegetables with the cheese mixture and stir gently.
  5. Transfer the mixture to a greased 9×13-inch baking dish.
  6. Prepare the crust by mixing crushed crackers with melted butter, and sprinkle over the casserole.
  7. Bake for 30-35 minutes until the top is golden brown.
  8. Cool for a few minutes before slicing and serving.
