Ingredients
Scale
- 1 lb Ground Beef
- 1 can Rotel Tomatoes and Green Chilies
- 1 cup Cheese (Cheddar or Mexican blend)
- 8 Soft Tortillas
- 2 tbsp Taco Seasoning
- Optional Toppings: Lettuce, Sour Cream, Salsa, Avocado
Instructions
- Brown the Beef: In a skillet over medium heat, add ground beef. Break it apart using a spatula and cook until it’s browned thoroughly. Drain any excess grease.
- Add Rotel and Seasoning: Stir in the Rotel tomatoes and taco seasoning. Let it simmer for about 5–10 minutes, allowing flavors to meld together.
- Warm Your Tortillas: While the beef simmers, warm the tortillas in a pan or microwave them for 15–30 seconds.
- Fill the Tortillas: Scoop generous portions of the beef mixture onto each tortilla.
- Top and Serve: Sprinkle with cheese and add toppings, fold the tortillas, and serve warm.
Notes
You can pre-cook the beef filling and refrigerate it for easy meal prep. Try making these tacos in the air fryer for a crispy texture.
