			- 1 medium cauliflower, cut into florets
 - 2 cups pumpkin, diced
 - 2 tablespoons olive oil
 - 1 teaspoon garlic powder
 - 1 teaspoon onion powder
 - 1 teaspoon paprika
 - Salt and pepper to taste
 - 1 cup shredded cheese (cheddar or mozzarella)
 - 1/4 cup grated Parmesan cheese
 
Instructions
- Preheat the oven to 400°F (200°C).
 - In a large bowl, toss the cauliflower and pumpkin with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
 - Spread the mixture on a baking sheet in a single layer.
 - Roast in the preheated oven for 25-30 minutes, or until tender and golden brown.
 - Remove from the oven and sprinkle the shredded cheese and Parmesan on top.
 - Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
 - Serve warm and enjoy!
