  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

  • 0.33 cup honey
  • 23 tablespoons hot sauce
  • 1 cup sour cream
  • Jalapeños, chopped
  • 1 tablespoon lime juice
  • Salt, to taste
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons butter
  • Fresh cilantro, chopped

Instructions

  1. Prepare the chicken: In a mixing bowl, toss your chicken pieces with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Sauté: Heat your nonstick skillet over medium-high heat. Add the seasoned chicken and cook, stirring frequently, until golden and cooked through (about 6-8 minutes). Remove and set aside.
  3. Mix the ingredients for the jalapeño cream sauce: In a bowl, combine the sour cream, chopped jalapeños, lime juice, and a dash of salt.
  4. Stir until smooth to ensure the perfect creamy texture.
  5. Layer: Lay a tortilla flat. On one half, add the cooked chicken, a generous scoop of the jalapeño cream sauce, and a handful of both cheeses.
  6. Fold: Gently fold the tortilla over to form a half-moon shape.
  7. Grill: Melt 1 tablespoon of butter in the skillet over medium heat. Place the folded quesadilla in the skillet and cook until golden brown and crisp, about 2-4 minutes per side. Repeat with remaining quesadillas, adding more butter as necessary.
  8. Slice and serve: Cut into wedges, garnish with fresh cilantro, and drizzle with hot honey for that final flourish.
