- 1.5 lbs boneless, skinless chicken breasts, cut into small pieces
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 0.33 cup honey
- 2–3 tablespoons hot sauce
- 1 cup sour cream
- Jalapeños, chopped
- 1 tablespoon lime juice
- Salt, to taste
- 8 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 tablespoons butter
- Fresh cilantro, chopped
Instructions
- Prepare the chicken: In a mixing bowl, toss your chicken pieces with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Sauté: Heat your nonstick skillet over medium-high heat. Add the seasoned chicken and cook, stirring frequently, until golden and cooked through (about 6-8 minutes). Remove and set aside.
- Mix the ingredients for the jalapeño cream sauce: In a bowl, combine the sour cream, chopped jalapeños, lime juice, and a dash of salt.
- Stir until smooth to ensure the perfect creamy texture.
- Layer: Lay a tortilla flat. On one half, add the cooked chicken, a generous scoop of the jalapeño cream sauce, and a handful of both cheeses.
- Fold: Gently fold the tortilla over to form a half-moon shape.
- Grill: Melt 1 tablespoon of butter in the skillet over medium heat. Place the folded quesadilla in the skillet and cook until golden brown and crisp, about 2-4 minutes per side. Repeat with remaining quesadillas, adding more butter as necessary.
- Slice and serve: Cut into wedges, garnish with fresh cilantro, and drizzle with hot honey for that final flourish.

Make-ahead tips: Prepare the chicken and jalapeño cream sauce in advance and store them in the fridge. Just assemble and cook when you’re ready.
