Cheesy Breakfast Quesadillas are a delightful and easy-to-make morning treat filled with gooey cheese and your choice of breakfast ingredients.
Ingredients

- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 4 large eggs
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup cooked and crumbled sausage or bacon (optional)
- Salt and pepper to taste
- Cooking spray or butter for frying
Instructions
- In a skillet, heat a little cooking spray or butter over medium heat.
- In a bowl, whisk the eggs and season with salt and pepper.
- Add the diced bell peppers, onions, and cooked sausage or bacon to the eggs and mix well.
- Pour the egg mixture into the skillet and scramble until fully cooked.
- Remove the scrambled eggs from the skillet and set aside.
- Place one tortilla in the skillet, sprinkle half of the cheese on one half of the tortilla.
- Add a portion of the scrambled egg mixture on top of the cheese.
- Sprinkle the remaining cheese over the eggs and fold the tortilla in half.
- Cook until the bottom is golden brown, then flip and cook the other side until golden and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Feel free to customize the filling with your favorite vegetables or proteins.
- Serve with salsa or sour cream for dipping.
- These quesadillas can be made ahead and reheated for a quick breakfast.
