Description

Indulge in the creamy, cheesy goodness of this Cheesy Beef & Spinach Tortellini Casserole, where tender tortellini meets a savory beef and spinach filling. The rich, bubbling cheese on top creates a golden crust that contrasts beautifully with the soft, flavorful layers beneath.

Ingredients

  • Tortellini: 12 oz cheese tortellini, cooked according to package instructions
  • Ground Beef: 1 lb lean ground beef, browned and drained
  • Spinach: 2 cups fresh spinach, chopped
  • Cheese: 2 cups shredded mozzarella cheese, divided
  • Ricotta: 1 cup ricotta cheese
  • Marinara Sauce: 2 cups marinara sauce
  • Garlic: 3 cloves garlic, minced
  • Onion: 1 medium onion, diced
  • Olive Oil: 2 tablespoons for sautéing
  • Seasoning: 1 teaspoon Italian seasoning, salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the browned ground beef to the skillet, followed by chopped spinach, Italian seasoning, salt, and pepper. Cook until the spinach wilts, about 2-3 minutes.
  4. In a large mixing bowl, combine the cooked tortellini, marinara sauce, ricotta cheese, and half of the mozzarella cheese. Stir in the beef and spinach mixture until well combined.
  5. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  6. Top with the remaining mozzarella cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Let it cool for 5 minutes before serving.
