Instructions
- Whisk dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Cream butter and sugar: In a large mixing bowl, cream softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
- Add egg and vanilla: Beat in the egg and vanilla extract until fully incorporated.
- Combine dry and wet ingredients: Gradually add the flour mixture into the butter mixture until smooth.
- Divide the dough: Split the dough in half; mix cocoa powder into one half.
- Form logs: Roll each half of the dough into logs, about 1.5 inches in diameter.
- Chill for 30 minutes: Wrap logs in plastic wrap and refrigerate.
- Slice and arrange: Preheat oven to 350°F (175°C), slice logs into rounds, and arrange them in a checkered pattern on a lined baking sheet.
- Bake: Bake for 10-12 minutes or until just set.
- Cool before serving: Allow cookies to cool before transferring to a wire rack.
