Ingredients

  • 3 large eggs
  • 1 cup (200g) sugar
  • 1/2 cup (120ml) milk
  • 1/2 cup (120ml) vegetable oil or melted butter
  • 1 tablespoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup (240ml) heavy cream
  • 1/2 cup coconut milk (optional)
  • 1 cup sugar (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 tablespoon butter (for caramel)
  • Pinch of salt (for caramel)
  • Shredded coconut or crushed nuts (optional topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Beat the eggs and sugar together until light and airy, about 2-3 minutes.
  3. Add in the milk, oil (or melted butter), and vanilla extract, mixing until well blended.
  4. Combine the flour, baking powder, and salt in another bowl. Gradually fold this into the wet ingredients until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes. Check for doneness with a toothpick.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. Whip the heavy cream until soft peaks form, then fold in sweetened condensed milk and coconut milk (if using).
  8. Slice the cake in half horizontally; spread the creamy filling between the layers.
  9. For the caramel topping, combine sugar and heavy cream in a saucepan. Heat until sugar dissolves, then add butter and salt and simmer until thickened.
  10. Pour the caramel over the cake and finish with shredded coconut or crushed nuts if desired.
  11. Slice generously, serve, and enjoy!

Notes
