- 3 large eggs
- 1 cup (200g) sugar
- 1/2 cup (120ml) milk
- 1/2 cup (120ml) vegetable oil or melted butter
- 1 tablespoon vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tablespoon baking powder
- Pinch of salt
- 1 can (14 oz) sweetened condensed milk
- 1 cup (240ml) heavy cream
- 1/2 cup coconut milk (optional)
- 1 cup sugar (for caramel)
- 1/2 cup heavy cream (for caramel)
- 1 tablespoon butter (for caramel)
- Pinch of salt (for caramel)
- Shredded coconut or crushed nuts (optional topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Beat the eggs and sugar together until light and airy, about 2-3 minutes.
- Add in the milk, oil (or melted butter), and vanilla extract, mixing until well blended.
- Combine the flour, baking powder, and salt in another bowl. Gradually fold this into the wet ingredients until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes. Check for doneness with a toothpick.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Whip the heavy cream until soft peaks form, then fold in sweetened condensed milk and coconut milk (if using).
- Slice the cake in half horizontally; spread the creamy filling between the layers.
- For the caramel topping, combine sugar and heavy cream in a saucepan. Heat until sugar dissolves, then add butter and salt and simmer until thickened.
- Pour the caramel over the cake and finish with shredded coconut or crushed nuts if desired.
- Slice generously, serve, and enjoy!
