Deliciously moist carrot cake bars topped with a rich cream cheese frosting, perfect for any occasion.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix together oil, eggs, grated carrots, and crushed pineapple.
- Combine the wet ingredients with the dry ingredients and stir until just combined. Fold in walnuts if using.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- While the bars are baking, prepare the cream cheese frosting by beating together cream cheese, butter, powdered sugar, and vanilla until smooth.
- Once the bars are cool, spread the cream cheese frosting on top.
- Cut into squares and serve.
Notes
- Store leftovers in the refrigerator for up to 5 days.
- These bars can be frozen for up to 3 months without frosting.
- For added flavor, consider adding raisins or coconut to the batter.
