Description

Delicious and nutritious bite-sized treats that capture the rich flavors of carrot cake in a healthy snack.


Ingredients

  • 1 cup grated fresh carrots
  • 1 cup pitted dates
  • 1/2 cup walnuts, chopped
  • 1 cup rolled oats
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Pinch of salt
  • Shredded coconut for rolling (optional)

Instructions

  1. Combine the ingredients in your food processor: grated carrots, pitted dates, chopped walnuts, rolled oats, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Pulse until sticky.
  2. Shape about a tablespoon of the mixture into 1-inch balls.
  3. Roll each ball in shredded coconut if desired.
  4. Chill in an airtight container in the refrigerator for at least 30 minutes.
