Ingredients

- 1 cup grated fresh carrots
- 1 cup pitted dates
- 1/2 cup walnuts, chopped
- 1 cup rolled oats
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- Pinch of salt
- Shredded coconut for rolling (optional)
Instructions
- Combine the ingredients in your food processor: grated carrots, pitted dates, chopped walnuts, rolled oats, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Pulse until sticky.
- Shape about a tablespoon of the mixture into 1-inch balls.
- Roll each ball in shredded coconut if desired.
- Chill in an airtight container in the refrigerator for at least 30 minutes.
