- 2 cups milk (or dairy-free alternative)
- 1 cup grated carrots
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 large eggs
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the milk, eggs, brown sugar, and maple syrup.
- Stir the wet ingredients into the dry ingredients until well combined.
- Add the grated carrots, raisins, and walnuts, mixing until evenly distributed.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the top is golden and set.
- Let cool for a few minutes before serving.
Notes
- Can be served warm or cold.
- Store leftovers in the refrigerator for up to 5 days.
