- For the Risotto:
- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1/2 cup dry white wine
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- For the Caramelized Onions:
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
Instructions
- In a saucepan, heat the broth over low heat and keep it warm.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20-25 minutes until they are golden brown and caramelized.
- Stir in the balsamic vinegar and sugar, cooking for an additional 2 minutes. Remove from heat and set aside.
- In a separate pot, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the Arborio rice to the pot and toast for 2 minutes, stirring frequently.
- Pour in the white wine and cook until it has mostly evaporated, about 3-4 minutes.
- Begin adding the warm broth, one ladle at a time, stirring frequently. Allow the rice to absorb the liquid before adding more. This process should take about 18-20 minutes.
- Once the rice is creamy and al dente, stir in the caramelized onions and Parmesan cheese. Season with salt and pepper to taste. Serve immediately.

- This risotto can be made ahead of time and reheated gently on the stove with a splash of broth.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
