  • For the Caramelized Onions:
    • 2 large onions, thinly sliced
    • 2 tablespoons olive oil
    • 1 tablespoon balsamic vinegar
    • 1 teaspoon sugar

Instructions

  1. In a saucepan, heat the broth over low heat and keep it warm.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20-25 minutes until they are golden brown and caramelized.
  3. Stir in the balsamic vinegar and sugar, cooking for an additional 2 minutes. Remove from heat and set aside.
  4. In a separate pot, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Add the Arborio rice to the pot and toast for 2 minutes, stirring frequently.
  6. Pour in the white wine and cook until it has mostly evaporated, about 3-4 minutes.
  7. Begin adding the warm broth, one ladle at a time, stirring frequently. Allow the rice to absorb the liquid before adding more. This process should take about 18-20 minutes.
  8. Once the rice is creamy and al dente, stir in the caramelized onions and Parmesan cheese. Season with salt and pepper to taste. Serve immediately.
