  • 3 ripe bananas, thickly sliced
  • 100 grams brown sugar
  • 45 grams butter
  • 70 grams brown sugar
  • 30 grams butter
  • 30 milliliters dark rum
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

  1. Preheat the oven to 175°C (350°F).
  2. Prepare the crust by combining graham cracker crumbs, granulated sugar, and melted butter. Press into the base of a springform pan and bake for 8 minutes, then let cool.
  3. Reduce oven temperature to 163°C (325°F). Beat the cream cheese until smooth, then add granulated sugar, eggs one at a time, sour cream, and vanilla extract, mixing until just combined.
  4. Pour the filling over the cooled crust and bake for 55 to 65 minutes until the edges are set. Let cool in the oven for 1 hour.
  5. Chill in the refrigerator for a minimum of 4 hours or overnight.
  6. For the caramelized bananas, melt butter in a skillet, stir in brown sugar, add bananas, and cook until golden. Set aside to cool.
  7. Prepare the rum glaze by melting butter and brown sugar in a saucepan, stirring in dark rum and simmering for 2-3 minutes. Add cornstarch if a thicker glaze is desired.
  8. Assemble by arranging the caramelized bananas on the cheesecake and drizzling with rum glaze. Slice and serve.
