- 675 grams cream cheese, softened
- 200 grams granulated sugar
- 3 large eggs
- 240 grams sour cream
- 2 teaspoons vanilla extract
- 3 ripe bananas, thickly sliced
- 100 grams brown sugar
- 45 grams butter
- 70 grams brown sugar
- 30 grams butter
- 30 milliliters dark rum
- 1 teaspoon cornstarch (optional, for thickening)
Instructions
- Preheat the oven to 175°C (350°F).
- Prepare the crust by combining graham cracker crumbs, granulated sugar, and melted butter. Press into the base of a springform pan and bake for 8 minutes, then let cool.
- Reduce oven temperature to 163°C (325°F). Beat the cream cheese until smooth, then add granulated sugar, eggs one at a time, sour cream, and vanilla extract, mixing until just combined.
- Pour the filling over the cooled crust and bake for 55 to 65 minutes until the edges are set. Let cool in the oven for 1 hour.
- Chill in the refrigerator for a minimum of 4 hours or overnight.
- For the caramelized bananas, melt butter in a skillet, stir in brown sugar, add bananas, and cook until golden. Set aside to cool.
- Prepare the rum glaze by melting butter and brown sugar in a saucepan, stirring in dark rum and simmering for 2-3 minutes. Add cornstarch if a thicker glaze is desired.
- Assemble by arranging the caramelized bananas on the cheesecake and drizzling with rum glaze. Slice and serve.
