- 2 chicken breasts, diced
- 8 oz pasta of choice
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and cook until browned and cooked through.
- Add minced garlic and cook for an additional minute.
- Stir in cherry tomatoes and cook until they start to soften.
- Meanwhile, cook pasta according to package instructions; drain and set aside.
- Add cooked pasta to the skillet and mix well.
- Stir in mozzarella balls and fresh basil, cooking until the cheese is slightly melted.
- Season with salt and pepper to taste, then serve warm.
Notes
- Feel free to substitute with whole wheat pasta for a healthier option.
- Can add spinach or arugula for extra greens.
- Leftovers can be stored in the refrigerator for up to 3 days.
