Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, and salt; set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- While the cookies cool, prepare the filling by mixing ricotta, powdered sugar, vanilla extract, chocolate chips, and orange zest in a bowl until smooth.
- Once cookies are completely cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie to form a sandwich.
- Dust with additional powdered sugar before serving.
